My take on a breakfast quiche. This can be modified very easily based on what ingredients you have on hand or how much time you have. My favorite way to make it? Here’s a hint. We love all the flavors. Why not have it all in one? I’m sharing the recipe as I make it for more special occasions. However, you can easily omit the pie crust topping and the sausage and just make it as a cheese quiche. Or if you have ham in the fridge, add cheese, ham and spinach. I make this frequently for a more easy-to-put-together on a homeschool morning or even on a sunday morning before church. Sometimes it feels really good to make something quickly, put it in the oven, and set a timer. Then grab your morning coffee and sit hubby while the kids are still sleeping. If I want to have something ready more quickly, I will make a smaller portion and split this recipe approximately in half. Bake time is approximately 30 minutes when the recipe is halved.

  1. Preheat the oven to 375℉. Spray nonstick cooking spray on the bottom of a large casserole pan.
  2. Add a single layer of frozen tater tots to the bottom of the pan. Prebake in the oven while mixing the other ingredients.
  3. In a large bowl, whisk all ingredients together, adding the cheeses and any mix-ins last.
  4. Next, take the tater tots out of the oven, pour the egg mixture on top of the tater tots.
  5. If you have time, add a fancy pie crust or just a rolled out sheet to the top.
  6. Bake for about 1 hour or until internal temperature reaches 165℉. If using pie crust, you will need to watch for excessive browning while baking and add foil if needed towards the end of baking.
  7. Let stand for 5-10 minutes prior to serving.

Tips from a mom with a big family: 

  • Cut up 3-4 onions and 3-4 bell peppers. Grill the onions, peppers, and an entire large 3lb tube of Jimmy Dean’s italian sausage. Cook until done. Divide into 3 parts. Make a pizza with one portion, quiche with another, and freeze another for spaghetti or pasta another time.
  • When you have 4 kids and 16 chickens, you need lots of cheese. Kids equal lots of scrabbled eggs and scrabbled eggs are always best paired with melted cheese. To save money, I do buy large blocks of cheese. Just go ahead and quickly shred that entire block. Put all the shredded cheese in a large ziplock and come back to it for the many things you can add cheddar cheese too.
